Healthy Banana Bread Oat Cookies



Hey!

I know this doesn't technically fit with the "theme" of my blog but I'm finding it increasingly harder to solely write about fashion and keep edging into the "random lifestyle" territory. Obviously I love clothes and will keep doing that bit but I always think of other things I want to share. When I posted a snap of these bad boys on my Insta story last week about 4 people asked for the recipe so it makes sense that these are my next post, right? That, and I've already written the recipe out 4 times so it pretty much wrote itself...

Ingredients:
- 1 large very ripe banana (or 2 small ones)
- 100g oats 
- 2 Tbsp honey (agave/maple syrup if vegan)
- 1 Tbsp coconut oil
- 1 Tsp cinnamon 
- 1 Tsp nutmeg
- Anything else you want to add that you think might go? Chocolate chips, cacao nibs, raisins, nuts, dessicated coconut etc.

The rest is all very simple (like most of my cooking). I literally made them because I brought an extra large banana home from work and fancied a bit of something sweet so I made them whilst waiting for my dinner to cook...

Method:
- Preheat oven to 170 degrees (fan oven)
- Smush up the banana with a fork in a large bowl 
- Add the coconut oil and honey (or vegan substitute if using) and combine well with a fork
- Pour in the dry ingredients and combine further*
- Tip in any optional extras
- Take a tablespoon of mixture and dollop onto a tray lined with baking paper (mixture makes one regular tray of oreo-sized cookies)
- Bake in the oven and check after 15 minutes until golden brown 

*Top tip: leave mixture to rest for 10 mins for the flavour to soak into the oats (do the washing up or something)

These are definitely best eaten straight out of the oven when they are sill gooey in the middle but I did manage some self restraint and saved some for breakfast too!
